Sunday Meal Prep | Week of October 27
PSA: A hand blender will make your life easier during soup season.
I received two gift guides this week, which means the holiday season is officially ramping up. As is life isn’t nutty enough, this two month stretch between Halloween and New Year’s Day seems to be the nuttiest. It’s easy to set aside our nutrition goals until the new year, but in reality, the holidays are just a handful of indulgent dinners and maybe a little travel. Don’t fall into the “on-the-wagon” / “off-the-wagon” trap of letting a few meals turn into weeks and weeks of poor eating habits. There are so many opportunities to incorporate nutrition into the holidays while still enjoying you aunt’s famous pumpkin pie. It can be both, and you’ll enjoy January more if you keep up with some of your routines.
We have a lot of protein-packed soups coming up. Last week, I received a few panicked messages from people who didn’t have a hand blender to make the chicken tortilla soup. Fret not. You can always transfer the soup to a regular blender, I just find the hand blender to be so much easier! Plus, you can get a really good one for under $50. I’m bringing this back up because the kale, white bean, and sausage soup on this week’s menu also uses a hand blender. But, instead of blending the whole soup, we’re blending half and leaving the rest chunky. If you don’t have a hand blender, you can pour half of the soup into a regular bender. It does the same thing, but is a little messier.
Happy cooking!
xx Mia
A few meal prep-adjacent things I’m excited about:
Protein hacks
You all know I love an easy way to increase your protein intake. Recently I’ve been obsessed with Kroma’s high protein products, including their Vanilla Cinnamon Protein Powder, Collagen Matcha with 11g of protein (so perfect for an afternoon pick me up!!), and their chicken and beef powdered bone broth. Even my husband now brings this bone broth to work to increase his daily fast and protein intake—you just add hot water, so it couldn’t be easier for on-the-go.
Cozy sets
When the weather starts to cool down, I love a good loungewear set. I recently picked up this half zip pullover and track pant set from Varley (on of my favorite activewear brands) — I will be wearing this everyday for school drop off. And, I’m a longtime fan of Negative’s whipped collection. These wide legged pants and matching henley are great for slow mornings or even to sleep in.
And don’t forget about our next book club! We’ll be reading Fast Like a Girl by Dr. Mindy Pelz. It’s excellent and I can’t wait to chat about it with you all. Mark your calendars for Friday, November 8th at 9:30am PT/12:30pm PT. This is a discussion for paid subscribers. If you want to join in, you can update your subscription here:
Alright friends, let’s cook!!
Tonight we’ve got a flavorful chicken satay on deck. If you have time to marinate the chicken beforehand, you won’t regret it. For anyone who doesn’t eat chicken, this is equally delicious with tofu. I’d also highly recommend making the kale, white bean, and Italian sausage soup today if you have time. You’ll be happy to just heat and eat tomorrow. And for Thursday’s Halloween festivities, I included a very easy and quick taco bowl to fuel you for your trick-or-treating adventures. If you’re hosting friends, consider making a big batch of last week’s chicken tortilla soup.
