Chicken tortilla soup, meal prep essentials, and thoughts on yolo-ing
I really thought the chicken tortilla soup would be the star recipe this week, then I made this halibut puttanesca. Oh my lord, yum! It was also so so easy (and quick) to make. I can’t wait to hear what you think of it.
I have been in Miami for the past few days and was yolo-ing hard. I came to speak and host a lunch for Skin Laundry’s 10th anniversary and stayed for a fun weekend with my husband. It’s our 8th wedding anniversary on Tuesday, so we celebrated with a trio of date nights: Pastis, Carbone (!), Casa Tua (my favorite restaurant in Miami).
I obviously very much value my health and what I put into my body, but this mama likes a good time too (photo evidence from Carbone below!). One indulgent weekend is unlikely to make a big impact on your life (except for perhaps, the memories you’ll savor), but what you do every day counts. That’s where meal prep and having easy access to assembly meals makes all the difference! Honestly, I can’t wait to get home to the land of 6pm dinners, but it’s been fun.

Alright, let’s cook!!
Tonight’s dinner is a chicken tortilla soup, and this recipe, my friends, will be in the rotation all through soup season. It really hit the spot and takes no more than 30 minutes. I mistakenly added a full jalapeño to the last batch, which was fiery, so I’m warning you. Next time I’m going to leave it out completely so Ozzie can eat it, but I just made him a deconstructed plate of chicken, black beans, avocado, and tomato. The chicken in the soup can come in the form of my slow cooker meal prep chicken (make extra for Tuesday’s fried rice and lunchtime assembly bowls) or a good ol’ rotisserie chicken.
Don’t skip the homemade tortilla crisps. They are extra and obviously way better for you than some store bought version fried in vegetable oil. For what it’s worth: I made this a second time and cut the tortilla strips much smaller than how they are pictured here and I liked it better. Enjoy! xx
