Were you up early today after the clock change? I’m up early writing this. It’s still dark out — I put the fireplace on and made a tea. It’s kind of nice, but I’m sure I won’t be the only one in my house up early.
If you do one thing today, make this chicken & lentil soup. It is a nutrition-nerd’s dream meal: protein-rich, incredibly high in fiber, full of micronutrient-rich plants, and served in a nourishing warm broth. And while I boast about its nutrition properties, I should mention that it’s totally delicious and shockingly easy to make. Have I sold you yet? I’m fascinated by Martha Stewart and the new Netflix documentary on her doesn’t disappoint. Apparently she hated the doc, but I loved every second of it. She is a beast (in a good way). Watch it.

Another great thing about tonight’s chicken and lentil soup (yes, there’s more!) is that it’s going to provide so much value beyond dinner tonight. In addition to leftovers, we’re making the chicken separately so you can use it for assembly lunches and to add protein to Tuesday’s wild rice and roasted vegetable salad. This also means you could make it without chicken, but I like the extra protein it offers.
This week we’re also seeing the return of my favorite salmon two ways and a glorious grass-fed ribeye with a fall harvest salad. If red meat isn’t your thing you could literally have any other protein with this salad—chicken, shrimp, tofu, you name it.
