I like to use the hand blender to blend a bit of cottage cheese and fold that into the egg mixture for omelet or scramble.

There are so many different brands of cottage cheese, you may need to just keep trying until you find the right one for you.

I use non-fat greek yogurt or yogurt cheese in my morning omelette. And a teaspoon of Trader Joes seasoned sesame seeds with chopped tomato and chives.
