I love a recipe that feels like a template and can easily be reproduced with different ingredients. Last week’s fried rice was a great example of that (and a personal favorite of mine). I was thrilled to hear that so many of you all liked it too. It’s the perfect fall transition dish as it feels simultaneously light and hearty. Plus, when you have leftover protein, it literally takes 10 minutes to put together. If you like what you’re making, I’d love to hear about it. Feel free to share in the chat or tag me on good old instagram. It always makes my day. :)
This week we have another favorite templatized dish: French lentils. Lentils have become a hero food for me. A cup of cook lentils had 18 grams of protein and 16 grams of fiber. Add a little chicken, smoked salmon, an egg, some walnuts, or goat cheese, and you’ve got yourself a very protein-rich meal that meets nearly half your daily fiber needs as well. I love lentils so much that I’m going to do an entire Friday post dedicated to lentils soon. Until then, I encourage you to make a big batch of lentils today to enjoy for the week.
In other news, I’m kind of late to the game here, but I just ordered an Oura ring. I have two young children, so something about getting sleep data that I can’t control seemed cruel, but I am now ready for it. Also, I didn’t realize you could use and HSA/FSA for it. Pretty cool. I went with the brushed gold—couldn’t resist a functional jewelry moment lol. Stay tuned, friends.
Happy lentil cooking! xx
A few meal prep-adjacent things I’m excited about:
Currently reading
I’m compiling some thoughts on Ozempic/GLP-1 inhibitors for an upcoming post and am absolutely engrossed in Magic Pill by Johann Hari. It’s really an excellent read. I’m also, of course, gearing up for our next book club: Fast Like a Girl by Dr. Mindy Pelz.
My fave NA drink
I had some friends over last week and we wanted something but none of us felt like having a drink. I had a bottle of Ghia’s newest Le Fizz and it was perfect: fun, celebratory, delicious, and not full of sugar and crap. I’m giving away a bundle of their products which includes their Le Fizz and a duo of their aperitif bottles, which I love with sparkling water and lime. Check out the giveaway details here.
Lastly, I know this is kind of silly, but this hair towel is truly amazing. If you have a long hair, you need this.
Alright friends, let’s cook!!
I’ve been milking the end of tomato season for all it’s worth. Tonight we have a steak dinner (complete with a moorish tomato salad) and Thursday it’s chicken with schmaltzy tomatoes (is there anything better?). We’ve also got lentils on deck, but you knew that already….
