Sunday Meal Prep | Week of September 29
It's chicken soup season, friends! Plus, spaghetti squash and fluoride-free toothpaste.
We’ve got the first soup of the season on deck this week and I am ready. This chicken & wild rice soup one of my favorites. It’s easy, comforting, and very freezable—trust me, you’ll be thrilled to have this already made if you catch a sniffle or just need a cozy meal.
I’ve also been making a lot of spaghetti squash lately (and hopefully you will tonight, too). I forgot how much I love spaghetti squash — deliciousness aside, it is a great pasta alternative, with way fewer carbs, more fiber, and more micronutrients.
Just for fun, let’s compare macros on regular ol’ spaghetti to spaghetti squash:
1 cup of spaghetti: 221 calories, 40 grams of net carbs
1 cup of spaghetti squash: 42 calories, 8 grams of net carbs
Ding ding ding, we have a winner.
In other news, today is my son Ozzie’s 5th birthday!! I’ll be in bouncy castle heaven (or hell) in a few hours. Will need a warm bowl of this soup later. Wish me luck. xx

Fluoride-free toothpaste..
This week, a federal judge ordered the EPA to increase regulations of fluoride because high levels can harm the intellectual development of children (!). Luckily hydroxyapatite is a safe and effective alternative to protect against cavities and remineralize teeth. Two brands I love (for kids and adults) are RiseWell and Boka.
A really good toy for kids…
Sorry, I’ve got kids birthdays on my mind, and I have to tell you we are obsessed with PLUS PLUS blocks. Beyond the obvious direction following and creative skills, I love that they are BPA, PVC, and Phthalate-free, 100% recyclable, and made in a factory that is powered entirely by wind. Feels good to find a toy that kids actually like and is not absolutely horrifying for the environment.

So the chicken soup is actually for tomorrow. I would highly recommend making it today though. Chicken soup always tastes better the next day, and you’ll be happy to just heat it up for dinner tomorrow. Tonight’s meal is spaghetti squash with turkey meatballs. I always thought of turkey meatballs as a more boring version of regular meatballs, but I added lemon zest to this batch and it was a totally new vibe. I should also mention that this recipe has no breadcrumbs, but there is some parmesan.
