What I'm cooking + a few other tidbits that you didn't ask for but might enjoy.
I went to an event this week and someone said in front of a group of 40+ women I admire that they cook my recipes every week. I almost cried. Literally. Sometimes I’m not sure if anyone is reading or making any of these recipes. Hearing someone I didn’t know say they were on this journey too got me thinking: If you’re cooking with me, I want to get to know you better. And I want give you some free sh*t, because I appreciate you and I can (and it’s fun). So in an effort to build some more community outside of our inboxes, I’m starting a monthly giveaway series. Here’s how it’s going to work:

WHAT I’M LOVING RIGHT NOW
Happy Mother’s day to all the moms, grandmas, aunties, godmothers, best friends, and dads pulling double duty. Before we get to this week’s menu, here are a few “meal prep adjacent” things I’m into and thought you might enjoy:
Mom’s prioritizing themselves
It’s a quote from one of you that made me happy.
"I’m really prioritizing healthy delicious food for myself right now (in a life phase where I was previously focusing all my attention on what my two year old eats, which of course matters too!) but wanting to get real joy out of my own meals again!"
Banana donuts
Gluten free, dairy free, sugar free (but still good)
Ozzie has been asking for donuts, so we made these and they turned out pretty well. TBH, they’re not totally different from banana bread (just in a donut pan) but I added the recipe to the doc for the week—abonus if you like baking and low sugar treats (with or without kids). You’ll need a donut pan, like this one.

MENU | WEEK OF MAY 12
Since it is Mother’s Day today, I’ll tell you one thing I’m not doing: cooking. But don’t worry, I won’t leave you high and dry, and lord knows Mother’s Day doesn’t extend to Monday, so we’re going with light and easy this week (and no prep today). If you’re cooking tonight, we’ve got burger plates on deck, a no-prep rotisserie chicken dinner tomorrow, and some easy-yet-delicious meals for the rest of the week, including a high-protein, plant-based favorite.
