Sunday Meal Prep | Week of March 31
What I'm cooking + few other tidbits that you didn't ask for but might enjoy.
If you follow me on Instagram and the algorithm actually shows you my posts, you’ve probably noticed that I’m in Costa Rica, so I’m going to keep this brief. I’m sure I’m not the only one traveling for spring break or that has plans today, so with that that in mind, this week’s meal prep is really paired back.
My hope for all of you prepping and cooking with me is to make you more confident cooks and help you find easy solutions to enjoy more home-cooked meals. It’s nice to spend a couple of hours on Sunday getting organized, but there will always be weeks where that is just physically not possible. I want you to have healthy and nourishing options regardless of the circumstance, so that’s the theme this week!

This week’s menu highlights meals with minimal to no prep and utilizes the pantry and freezer in convenient, prep-free ways. For dinner, we’ve got an omelet on deck, minestrone soup that you maybe made and froze last week, my favorite leftover fried rice, and more.

Vacation bliss…
Hacienda Altagracia
I was invited by The Well to do a two week residency at Hacienda Altagracia, an Auberge resort in the mountains of Costa Rica. For the past week, I’ve been hosting nutrition seminars and cooking classes in literal paradise. This place is just absolutely incredible, and I feel so grateful that I got to take my family here. Ozzie and Freya are just thriving. If you ever have the opportunity to visit, it’s really next level.
