Sunday Meal Prep | Week of March 24
What I'm cooking + few other tidbits that you didn't ask for but might enjoy.
Full disclosure: I’m out of town for the next two weeks, so I won’t be meal prepping with you, but I’d never leave you empty handed. It does get me thinking, however, about how to a trip can really throw off your schedule and get you out of your routine. With Spring break ahead of us, I’m sure some of you will be traveling as well, so I’m using this as an opportunity to trouble shoot for the weeks you just can’t grocery shop or prep.
This week’s menu is kind of business as usual, but we are starting with a Spring minestrone soup (it’s delish by the way!!) that you can enjoy and freeze for later. If you’re going out of town Easter weekend or have plans that Sunday, this is an easy heat-and-serve meal. Meal prep for the week of March 31 will not include any Sunday prep just to serve as an example for how you can set yourself up for success and have healthy meals regardless of the time you have to prep.

In addition to that spring minestrone (yum!), we’ve got a chimichurri halloumi bowl, chicken curry salad sandos, and some more fun stuff. I made the halloumi bowl for my family this week and it was devoured by all with more enthusiasm than I anticipated. Can’t wait for you to try it! And, of course, I have some options if cheese isn’t right for you.
If you’re shopping today, here’s your grocery and my pantry lists. I’m continually updating and adding to this, so keep checking it as you grow your pantry. But before we get started, a few things I’m into:
In season
Asparagus
We’ve got asparagus on the menu 2x this week. To be completely frank, I’ve never really been that into asparagus but seeing it in the market lately felt like the turn of the season. I’ve enjoyed cooking with it and was shocked when Ozzie said he liked it. To me it’s quite a distinct flavor, but I guess they’ve been serving it at school, which makes me unbelievably happy.

Love on The Spectrum (Netflix)
I have been working a lot at night this week (like right now). I wanted to watch something easy and now I’m hooked on Love on The Spectrum. I’m not usually one for reality TV, but you just can’t help but root for these people. It’s so sweet.
