Sunday Meal Prep | Week of June 2
What I'm cooking + a few other tidbits that you didn't ask for but might enjoy.
Happy first Sunday of June, friends!

Speaking of dinner, I did not have my sh*t together last week. I was home over the holiday weekend but didn’t feel like going to the market on Sunday and I didn’t meal prep. Sometimes the mental load of two kids and a business is a lot and I just wasn’t feeling it. So, I took a break and didn’t really have a plan or anything prepped for dinner last week. Sunday/Monday was chill, but the rest of the week kind of wasn’t: I went to the store way more often, my meals felt rushed (read: less yummy), we ate later, Ozzie didn’t eat with us in the same intentional way that I’d like, and I ended up throwing out food (the worst). All in all it was not my best effort! And here I am, telling all of you to meal prep and I didn’t even do it (what a fraud, gasp!).
I did, however, get a collard green-wrapped salmon banh mi from Erewhon (delicious!) for lunch one day and when I got home I realized they didn’t charge me for it. It felt like a tiny win in the embarrassment that is my Erewhon habit; another notable problem when I don’t meal prep. Collard green wrap aside, last week was a good reminder of why I do meal prep. Although great in a pinch, I don’t want to have cottage cheese for lunch every day or have to begrudgingly come up with a dinner idea at 4pm.
Moral of the story: I am human and get behind just like I’m sure you do. Not trying to pretend that it’s all slow cooked chicken, French lentils, and frittatas all the time. We all have those weeks. Mine was last week. And that’s okay! I’m back on track today, friends.

My friend Jayme just launched this gorgeous pill case (never thought I’d put those words together, but I mean it) that will make you want to take your supplements when you travel. I love when mundane wellness-y stuff gets elevated. This is so well designed and fits more pills than it looks like it would.

Liquore delle Sirene
It might be Campari season, but we’re over the food dyes (yes, Campari and Aperol have Red Dye 40) and happy to have this low ABV option made with natural herbs and botanicals and absolutely no artificial colors, flavors, or preservatives. If you’re going to drink let’s not make it worse for you.

Good lord this show is good! It took me a minute to get into it, but now I am hooked. The story line is fascinating, and the acting and aesthetics are so good. It will make you incredibly anxious (this guy!) while daydreaming about a trip to Italy where you can see some Caravaggios and get a pair of Ferragamo loafers.

By popular demand, we are bringing back pulled pork this week! I love how versatile and easy this is to make. If you have leftovers, freeze them. We also have some fun sheet pan dishes and my all time favorite spaghetti (pictured below) from Foodwise.

- Pulled Pork Lettuce Wraps (butter lettuce leaves, quick pickled carrots, sesame seeds, and avocado with leftover pork from Sunday night. Done!)
- Chicken Salad
- Tuna Salad (check my Pantry List for my favorite brands!)
PREP AHEAD
- Nut & Seed Protein Bread (Foodwise, p. 191): great for breakfast with some nut butter and a collagen coffee, for avocado toast, or alongside salads at lunch
