Sunday Meal Prep | Week of Feb 25
What I'm cooking + few other tidbits that you didn't ask for but might enjoy.
I kind of forgot about the holiday last week. Even though I was home and intended to stick to the meal prep plan, life got in the way. We had friends over Sunday afternoon, which turned into a pizza delivery (goop kitchen to the rescue!) and zero meal prep. Monday was a holiday, which for a business-owning mom means the exact opposite: work without childcare. It was raining too, so I spent most of the day trying to work on my protein piece (did you read it?) in between lego building, feeding Freya, heating up leftover pizza, and feeling guilty about how many episodes of Bluey Ozzie had watched. Four pm came quick, so I put Freya down for her last nap of the day and thought: I have an hour to make dinner and get organized for the week.
Before I realized that I wouldn’t be meal prepping on Sunday, I did put the chicken in the slow cooker, so I had that done. I then roasted some mixed vegetables and sweet potatoes in the oven, hard-boiled half a dozen eggs, and made some quinoa. I threw together a simple green salad, opened a thing of hummus, and that was dinner: a serve-yourself buffet of foods already in Tupperware, ready for the fridge. It was a hodgepodge, but still delicious; a double whammy of Sunday dinner and meal prep all in one.
So what’s my point here? I’ve always hesitated to give prescriptive daily meal plans to clients because they’re almost impossible to follow, even when personally tailored to their dietary needs and preferences. I’m not in the business of setting unrealistic exceptions. I prefer to live somewhere in the middle of going with the flow and having a plan.
So, with that in mind, look at these menus as inspiration. You’re welcome to follow it to a tee or do a mix and match of recipes from previous weeks (they’re all filed under meal prep) and your family favorites. You know your life better than I do—I hope this helps you make a plan, but by all means go with the flow when you need to.

We made it: The last week of the longest shortest month of the year (what is it about February!?). This week’s highlights include the reappearance of my favorite salmon, a delicious and veg-heavy pasta, and a few very (let me repeat: very) easy lunches to round out the month before we start looking to spring.

I love it for smoothies (it has a straw cap!) and dressings/dips like this. This dressing tends to thicken in the fridge, so I love that I can store it in the blending vessel and give it another whirl with some extra water or olive oil to loosen it up. So easy!
