Recipe: Super Bowl Chili
Ingredients:
2 pounds lean ground beef (90/10)
1 yellow onion, diced
1 medium carrot, diced
2 cups cremini mushrooms, finely chopped
3 garlic cloves, minced
3 tablespoons chili powder
1.5 tablespoons cumin
1.5 tablespoons smoked paprika
3 tablespoons dried oregano
1.5 tablespoons ground coriander
3 tablespoons gluten-free all purpose flour
1 can diced tomatoes
1.5 cups beef or chicken broth
1 bay leaf
2 cans of beans (I like to use 1 can of kidney beans and 1 can of pinto)
Lots of salt and pepper
Green onions and cheddar cheese for garnish (I’m not a sour cream girl, but you do you!)
Instructions:
Heat a large Dutch oven to medium and add the beef and vegetables. Stir to break up the beef, and continue stirring until mostly cooked.
Add the spices and the flour. Season with salt.
Then, add the tomatoes chicken broth and bay leaf. Stir to combine.
Add the beans and allow to simmer for 15-20 minutes.
Serve with garnishes of your choice.
