Adding spinach to your pesto helps to bulk it up and adds an additional variety of veg. Use this for pastas, bowls, or salads. To make this a salad dressing, loosen with a little extra olive oil and lemon juice.
Ingredients:
1 cup spinach
1 cup basil
1 clove garlic
½ cup toasted pine nuts
Juice of lemon
½ cup olive oil
2 tablespoon water
Salt
Instructions:
Add all ingredients to a food processor and pulse for about 30 seconds, or longer if you want a creamier sauce.
Store in an airtight container in the refrigerator for up to five days.
