Recipe: Leftover Fried Rice
Ingredients:
1 tablespoon avocado oil
1 small shallot
2 cloves garlic, minced
1-inch nub ginger, minced
1 cup shredded broccoli
2-3 cups leftover rice
1 cup chopped spinach
2 eggs
4-8 ounces leftover protein
Tamari
Lime
Toasted sesame oil
Sesame seeds
Chili flakes
Instructions:
Heat avocado oil over medium in a large sauté pan.
Add shallot, garlic, and ginger. Sauté for a couple of minutes, then add the broccoli (or whatever other vegetable you choose).
Next add the rice (this is leftover). I chose ½ brown rice, ½ cauliflower rice, but use whatever you’d like.
Next add the chopped spinach until wilted.
Create a little hole in the rice and crack two eggs in. Use a spatula or wooden spoon to scramble then mix in with the rest of the rice.
Add the leftover chicken (or protein of choice).
Turn the heat off and season with tamari, lime and a little toasted sesame oil.
Serve with sesame seeds and chili flakes.
