On The Menu: Heirloom Tomato Panzanella with Grilled Chicken, Turkey Lettuce Wraps & More

I have been in the mood to socialize lately. The warm weather and long days really do it for me, which means I’ve been cooking a lot. Last weekend I invited a couple of friends over for an early evening hang and wanted to put out a simple spread for dinner. I landed on grilled chicken with an heirloom tomato panzanella, farro and broccoli rabe.
Truth be told, I meant to make a Greek salad, but I forgot the olives and decided to make homemade croutons, so it turned into more of a panzanella salad situation. Whatever it was, it was delicious. I also made a salsa verde, to go along with my entertaining formula, but I left in in the fridge. Oops. No one noticed (except me…the next day).

The salad was a winner. Truly. And so so simple. So I decided to put it on the menu for tonight alongside just the grilled chicken, but if you want to add a grain or a roasted veg, go for it, but please don’t skip the homemade croutons because they are without a doubt the most delicious thing on the planet. And while any tomato works here, heirlooms just feel a little extra special. Use them if you can find them.
For the chicken, I made a zesty mustard marinade and pounded it slightly (I’m very into doing this right now—here’s what I use) and cooked it on the grill pan that I can’t shut up about.
