Figuring out what to eat has gotten so confusion these days. There’s a lot of conflicting dietary information out there, with convincing arguments on all sides. If you’re looking for a North Star, it’s this: eat whole, unprocessed food. I know I’m always hammering on about protein (and I won’t stop), but if you want just one guiding principle of nutrition, this is it. Most of the food we eat should be single ingredient foods; think vegetables, fruit, eggs, seafood, poultry, meat, legumes, nuts, and seeds. Yes quality matters, yes I want you to get adequate protein in every meal, but start with this.
Nothing makes me happier than hearing how your meal prep series has helped you to enjoy more home-cooked meals. This seemingly simple change can make such a huge difference in your current and future health. Keep. It. Up.

Stepping off the scale:
Get a DEXA scan instead
I got my first DEXA scan on Friday and it was so insightful! The whole thing takes about 10 minutes. You lay down on a matt and this machine takes an image of your body, providing valuable insights into your body composition (i.e. lean body mass, fat, bone density). I am working on weight training and building more strength, and am excited to see where my muscle mass goes! I plan to go 1x a quarter. It is a much better indicator of health/body composition than stepping on the scale. I went to BOD in Venice and they generously offered a discount code if you’re local and want to try it (BOD50).

MENU | WEEK OF JUNE 9th
This week’s menu kicks off with a banger: Summer Thai Curry with coconut-poached chicken. I’ve tested this a handful of times over the past few weeks, and am excited for you all to try! It’s a good one.
Instead of rice, I served this curry with shiratake noodles and it was not bad. I know a little rice is nice sometimes, but truth be told it offers little nutritional value when compared to vegetables, legumes, nuts, seeds, and protein. The summer always feels carb-y to me (pizza!), so I try to save the grain-heavy meals for the weekends or nights out. Just some food for thought! As always, there are options in the recipe PDF. :)
