Sunday Meal Prep | Week of August 25
Salmon skewers, pasta salad, and my favorite sparkling water drink.

I am on a mission to make home-cooked meals easier and more exciting. Picture this: a casual Wednesday night after a long day of work, caring for children, or just living life. You’ve already grocery shopped for the week and know exactly what you’re having for dinner. As you start cooking, you realize that this meal is going to be good, so you get out your favorite serving platter and printed cloth napkins, and you sit down and enjoy a beautiful, healthy meal that took you 30 minutes. Maybe you even take a picture of it, because you feel proud of what you put together. You actually have a real conversation with your family, connect, laugh, and maybe (big maybe) your kids try something new. It’s delicious. It’s fun. It feels good. This is the vibe we’re going for friends.
Speaking of vibes, this week’s menu starts with a veg-forward, blood sugar-friendly pesto pasta (a favorite for kids and adults) with salmon skewers. It’s easy, delicious, and the leftovers will turn into an epic salmon salad tomorrow. We’ve also got my favorite sheet pan chicken with extra chicken so you can throw together a high-protein pasta salad during the week. The efficiency is thrilling!
I know what it feels like for 4pm to roll around and not have a plan for dinner. It’s an ughhhh moment that quickly turns into takeout. Again. 100 dollars (maybe that’s just in LA, but it always seems to be $100) for mediocre food, a bunch of annoying packaging, seed oils, and zero vibes. We’re switching things up, friends. Shoutout to all of you who sent me your steak salads this week! I’m working hard to make sure each week’s menu is a hit, but I’m taking suggestions (and answering questions) in the chat.
A few meal prep-adjacent things I’m loving right now:
Special drinks:
We love sparkling water in my house. One of the best things I bought when we moved last year was a carbonator. The bottles and cans are heavy, wasteful, expensive, and can be problematic (PUFAs, natural flavors, etc.). I have Aarke’s old version but we use it so much, I might upgrade to the pro model which has glass bottles. I get organic lime juice from the grocery store and add that to our sparkling water with ice and it’s by far the most refreshing drink I’ve ever had. We call it special drink. And truth be told it’s pretty special—I actually don’t like the taste of the cans anymore.
Around my neck:
I was trying to explain something about sugar cravings on Instagram this week and ended up with 1000 questions about my necklace. Well friends, this is it. They’re lab grown diamonds, which are significantly cheaper and more ethically-sourced than the real ones. Over the past few years, I’ve amassed a collection: I also have this necklace, these stud earrings, and this bracelet from the same brand.
Alright friends, let’s cook!!
